Founder & Director – MMV (Mumbaiya Misal and Vadapav)

Mr. Nisarg Thakkar is a seasoned entrepreneur and thought leader in the food and hospitality industry. With over a decade of experience in the Food & Beverage sector, he has developed deep industry insight and a strong command of franchise operations, brand building, and customer engagement.

His entrepreneurial journey is driven by a passion to deliver authentic culinary experiences with uncompromised quality. Recognizing the emotional connection people have with Indian street food, he founded MMV with a clear vision — to blend traditional Maharashtrian flavors with modern standards of hygiene, service, and consistency.

Under his dynamic leadership, MMV has grown from a single outlet to a thriving brand with a growing franchise network. His commitment to excellence and innovation continues to steer the brand forward, making MMV a trusted name not just in India, but soon across international borders.

Our Journey

2021

Back in 2021, our founder - Nisarg Thakkar, came up with the idea to serve Ahmedabad with authentic & traditional Maharashtrian delicacies. The idea was to make Amdavadis feel the taste of Maharashtra whenever they craved one. And that's how MMV Mumbaiya Misal and Vadapav began with 5 company owned outlets in a mere span of 6 months.

2022

2022 was the year when MMV wanted entrepreneurs & investors to join the movement of serving authentic & traditional Maharashtrian delicacies to our very own Garvi Gujarat. And hence, the franchise model of MMV came into place with a dedicated central production unit & a team equally devoted to make sure that there was no compromise on taste & quality.

2023

Ahmedabad had started giving us love to our then current - QSR based model. The city was absolutely loving us for what we were serving and that was the time when we launched our casual fine dine model, offering our guests with the comfort of eating traditional Maharashtrian food in a more settled environment. 

To add the cherry onto the cake, in the very same year, MMV also expanded to 50+ outlets across 20 cities of Gujarat and was serving 1M units of Vadapav & Misal Pav every month.

2024

With a growing trend for food businesses in the country, MMV then launched a model where passionate entrepreneurs could thrive in the food industry, despite having a limited budget and that was - the express model which worked strategically in our favor. With proven trust & customer support to our brand, this model helped us scale to 90+ outlets in 35+ towns & cities in India.

2025

What started as a movement to serve Ahmedabad with Authentic & Traditional Maharashtrian delicacies, we are now excited to announce - that our love for Maharashtrian food is now taking us international. The brand now sits in a position where it wouldn't only curb the cravings of the Indian market but also the international market,
